Meatball Soup

Meatballs (frozen) – I buy them at Costco or Sam’s – use however many you want.

  15-ounce can garbanzo beans, rinsed and drained

  14-ounce can beef broth

  14-1/2-ounce can Italian-style stewed tomatoes
1-1/2
  cups water
1
  cup sliced fresh mushrooms
1
  teaspoon dried Italian seasoning, crushed
1/4
  cup tiny bow-tie pasta or ditalini
3
  cups torn spinach or 1/2 of a 10-ounce package frozen chopped spinach, thawed and well drained

Directions
In a large saucepan stir together garbanzo beans, beef broth, undrained tomatoes, water, mushrooms, frozen meatballs, and Italian seasoning. Bring to boil. Add pasta. Return to boiling. Reduce heat and simmer, covered, for 10 to 12 minutes or until pasta is tender. Stir in spinach. Cook for 1 to 2 minutes more or just until spinach is wilted.

Makes 4 main-dish servings.

Make-Ahead Tip: Prepare soup, except do not add spinach; cool. Transfer to airtight freezer container; seal, label, and freeze up to 3 months. To reheat, transfer to saucepan; cook over medium heat, stirring occasionally to break up. Stir in spinach as above.

Alfredo Sauce

2 c. Heavy Cream
1 stick real butter
3 Tbs. Cream Cheese
1/2 to 3/4 c. Shredded Parmesan Cheese
1 tsp. Garlic Powder
Pinch of Black Pepper

Directions:
Melt butter and cream cheese over medium heat
Add heavy cream and cook for 5 min over med heat. (Never let it boil)
Add parmesan cheese, garlic powder and black pepper and continue to cook until cheese is fully melted.
(You can use fresh garlic - mince it very fine and add it to the butter and let it sweat for a couple of minutes than add cream cheese)
Important - Never let it boil as it will curdle the cream
You can replace the cream with 'Half and Half'. Just add a couple of Tbs of flour to the butter and then it will thicken...

Relief Society Birthday Party - Thursday, March 11th @ 6:30pm


Come celebrate the birth of our Relief Society through dinner, program and service project. 

Nice dinner and program will be the highlight for this event. 

At the end of our Birthday Party, we will be assembling Hygiene Kits to donate to the Humanitarian Center. The following items are included in each kit. (If you can donate any of these items, please bring them on Sundays. You can also bring them with you on March 11th.)
2 unbreakable combs (no sharp handles)
4 toothbrushes (packaged)
1 tube of toothpaste (6-8 oz., NO PUMPS)
2 bars of soap (approximately 4-5 oz.)
2 hand towels (new towels, approximately 15 inches by 25 inches. PLEASE DO NOT USE DISH TOWELS OR WASHCLOTHS. To sew towels, serge or zigzag the edges of terry cloth to make a 15" by 25" towel.)
1 gallon sealable bags
